Shredded Sweet Pork Recipe

We don’t have a Cafe Rio or a Costa Vida close to us, so I couldn’t do a side by side comparison, but I can say that a craving has been eliminated. If you search google, a million variations will come up, but this simple one is close enough for me.

5-6 lb pork roast
1 cup brown sugar
1 Tbsp cumin
20 oz Coke
12 oz red taco sauce


Place roast in crockpot and cover halfway up with water. Cook on low for 12 hrs. Add remaining ingredients to roast and cook an additional 4 hours. Take out roast and shred. Put back in sauce and cook for an additional 2 hrs.
I serve it on warm corn tortillas sprinkled with onion, cilantro, and a little cilantro ranch dressing (Fresh & Easy makes a great one) or you can make your own Tomatillo ranch dressing.

OH. MY. WORD! Made this for dinner tonight and it was fantastic. My 3 and 5 year old KEPT saying that they loved it and my husband ate 7(!!!!!!) tacos. Even my picky 2 year old loved it. Thanks so much for sharing the recipe.

I have been doing this for a while, but use a can of enchilada sauce instead of taco seasoning. One time I was at Cafe Rio and saw someone filling up a huge vat with Coke. My friend and I figured out it must be for the Pork Barbacoa. We miss Cafe Rio too. We made this and the Cilantro rice for Cinco de Mayo and it was great.
